🥘 Ingredients

Ingredients for making brownie in a mug.
  • Flour (we used King Arthur Gluten Free Flour)
  • Pure Cane Sugar
  • Cocoa Powder
  • Chocolate chips (we used Enjoy Life Chocolate Chips)
  • Milk (we used oat milk)
  • Avocado Oil
  • Pure Vanilla Extract
  • Baking Powder
  • Salt

🥣 Step By Step Instructions

Step 1: In a 8 to 12 oz mug, add the dry ingredients; all-purpose flour, cocoa powder, baking powder, salt and sugar. Mix until well combined.

Step 2: Then add the wet ingredients, milk, oil, vanilla extract. Mix until well combined.

Step 3: Add the chocolate chips on top.

Step 4: Put in the microwave for 1 minute and 45 seconds, or add a few more seconds, if it still has lots of wetness.

Step 5: Let the fudgy mug brownie cool off for at least one minute.

Step 6: Garnish with a little confectioners sugar, optional.

Hint: Spray the mug with your favorite plant-based cooking spray to prevent the microwave mug brownie from sticking to the cup.

🧂Substitutions

  • Mini Chocolate Chips - Use full-size chocolate chips or add your favorite vegan chocolate syrup on top.
  • Avocado Oil - Coconut oil will give you the same results.
  • Pure Cane Sugar - You can use either a granulated sugar substitute instead of pure cane sugar or brown sugar.

📖 Variations

  • Ramekins - Make your brownie in a ramekin or small bowl instead of a coffee cup or mug.
  • Double Layer - Make two mug cakes and layer them with your favorite vegan frosting in the middle.
  • Texture - Sprinkle shredded coconut on top.
  • Caramel - Drizzle some caramel sauce on top.
  • Peppermint - Add a drop of peppermint extract to the brownie and then top it with some crushed peppermint candies.
  • Peanut Butter - ​Melt some creamy peanut butter and spread it on top of the brownie. It's a healthy way to add some saltiness to the chocolate brownie.

🥡 Storage

This is a single-serve dessert that you're sure to gobble up in one sitting.

If you want to make another one and save it for later, I suggest removing it from the mug and storing it in an airtight container. Keep it in the refrigerator for up to three days.

👩🏻‍🍳 Expert Tips

  • Stir the dry ingredients together really well. This will help the brownie batter cook evenly. It might help to mix them in a separate bowl first. 
  • Use a larger mug if you're afraid of it growing too tall and spilling over.
  • It's normal for the brownie to rise while it cooks and then fall after you take it out of the microwave.
  • Check it before you eat it. All microwaves cook at different rates. If it's still too wet for you, cook it for another 20 seconds.

💭 FAQ

Can I use baking soda instead of baking powder?

No, you can't use baking soda instead of baking powder. They interact differently with the ingredients and the brownie won't rise.

Why is my brownie rubbery?

If your vegan microwave brownie came out rubbery, you probably used a mug that's too small or you used too much baking powder. Next time, be careful when you measure the ingredients.

Why is my mug brownie dry?

If your chocolate mug cake tastes too dry, it's probably because you didn't add enough avocado oil. The fat is what adds the moisture to it. Whether you use vegetable oil or avocado oil, make sure you measure it correctly.
